Stefanie’s Sweet Potato Shepard’s Pie


• 2 – 3 Medium Sized Sweet Potatoes
• 2 pound of lean ground beef
• 1 cup of chopped broccoli
• ½ cup peas and carrots

Boil Sweet Potatoes until tender
Mash sweet potatoes with a small amount of them chicken broth
Brown ground beef on stove
Place beef in pan, top with either broccoli or the carrots and peas, then add a layer of sweet potato on top
Bake in the oven for 20 minutes on 375/400
